pumpkin muffin recipe
I tweaked this recipe this morning for Nathan's snack day at school. It turned out really yummy!
Pumpkin muffins with cream cheese frosting (24-30 muffins)
4 eggs
2 cups sugar
1 can (15 oz.) pumpkin
1/2 (half) cup oil
1/2 cup applesauce
1/2 tsp. vanilla
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. ground nutmeg
Cream cheese frosting
Sprinkles, if desired (I had some cute autumn sprinkles)
(I didn't put in the chocolate chips like the original recipe, but frosted the muffins with cream cheese frosting - store bought frosting. I think you could also just use 1 cup of applesauce instead of the oil in the recipe).
Preheat oven to 400. Mix eggs, sugar, pumpkin, oil, applesauce, and vanilla. In another bowl, mix the flour, soda, powder, cinnamon, and nutmeg. Blend into wet mixture. Transfer to muffin cups or greased muffin tins. (Makes 24-30 muffins.) Bake for about 15 minutes. Remove muffins from pan and cool on wire rack. When cool, frost (and sprinkle).
